Former NY cab driver Doug Ducap was named the Grand Prize Winner of the Taste of the South Recipe Competition which was judged by Matt and Ted Lee, the James Beard Award winning authors of The Lee Bros. Southern Cookbook: Stories and Recipes for Southerners and Would-be Southerners. Unlike most traditional chili recipes which rely on the usual beef and beans, Charleston Chili was created using succulent pulled pork barbecue, country ham, boiled peanuts, and black-eyed peas. Ted Lee described the combination of the flavors in the Charleston Chili as, “…fantastic…clearly an original idea that followed through.” The full recipe is available here. The recipe will also be showcased in a future issue of Southern Living. DuCap’s original recipe for Moroccan Charbroiled Lamb & Fennel Stew With 7 Seed Couscous was a recent Semi-Finalist at the 2008 Redwood Creek Campfire Classic Recipe Competition. His recipe for Sun and Moon Sweet Onion Salad will be featured in an upcoming brochure by the Vidalia Onion Committee.

THE IDEA The bottom line is I love to eat. From that has a grown a love to cook and go out to eat. To me cooking is a creative process that allows the blending of endless ingredients and ideas. Yes there are a million way to skin a cat and 2 million ways to cook a chicken or render a slab of beef. Going out to eat allows you to take in someones idea on a dish you may have eaten 100 times in your life but the chef may have opened you eyes on a new way of doing it.

The Lowcountry stretches along the coast from the Savannah River in Georgia north to Pawley’s Island in South Carolina. It is a foodie's paradise with a seemingly never ending supply of new culinary delights and destinations to discover. Think boiled peanuts, saltwater marsh teaming with marine species, cultivated local gold rice, grits, crabs, shrimp, oysters, and more. This foodie explores every possible aspect of the culinary climate of the Lowcountry...and a whole lot more!

A place for foodies from all over to talk about anything they've found around Charleston that tantilizes their tastebuds or sours their stomachs. My background is mainly in cheese, so I'd love to answer any questions or start any discussions pertaining cheese and it's elaborate history. I also write for two barrier island newspapers, the Island Eye News and the Island Connection, and will be posting reviews on hidden restaurant finds, new restaurant openings and food pictures whenever I get a chance. If you hear of a new restaurant or have visited one that left you full and happy, let us know! Respectively, if you try a new beer (thank goodness for Pop the Cap!), wine, whisky or any tasty beverage, feel free to share your thoughts. Thanks and welcome to Charleston Food Talk!
